Potaje. Cozy Pot with Spanish Chickpea Stew!

Hello, flavor enthusiasts! Today, I’ll be your culinary guide as we embark on a delicious journey with a traditional Spanish recipe: Potaje de Espinacas. This hearty dish will whisk you away to the rustic charm of Spain, perfect for warming up on chilly days.

Ingredients for 4 people

  • 2 Cups (500g) dried chickpeas
  • 1/2 Onion, peeled
  • 1 Garlic head
  • 2 Tomatoes
  • 2 Bay leaves
  • 2 Carrots
  • 2 Big Potatoes, peeled
  • 2 Teaspoons sweet paprika
  • 1 Bunch of spinach
  • 1/2 Cup (100 g) pumpkin, diced (optional for added sweetness and texture)
  • 2 Cod filets (optional, but highly recommended)
  • 8 Cups (2 liters) vegetable broth or water
  • Salt and pepper to taste

Shoak the chickpeas overnight

Put all ingredients on the pot

Put all together. Then cover with vegetable broth or water. Add chickpeas as soon as the broth is hot

Cook for one hour and a half

Or until the chickpeas are soft. Serve and enjoy.

Directions

  1. Soak the chickpeas overnight in hot water.
  2. In a large pot, combine all the ingredients except the chickpeas, without the need to cut them.
  3. Pour in the vegetable broth or water.
  4. Add the chickpeas when the broth is hot.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for approximately 1,5 hours, or until the chickpeas are tender. (Note: The cooking time may vary depending chickpeas size)

Serving
Blend the tomato, onion, and a bit of broth. Serve the desired amount of broth in a deep plate with the chickpeas, pumpkin, potatoes, spinach and cod. Add salt to taste. Enjoy your culinary project, especially in cold weather.

Tips

Measures

  • It is not necessary to measure the ingredients precisely. The most important thing is that the chickpeas are covered by water at all times.

Ingredient Approach

  • I prefer the simplest method: combining all the ingredients raw, although sautéing and pre-processing the ingredients are good options. Alternatively, you can blend the onions and tomatoes after cooking and add them to the broth.
  • Avoid stirring the chickpeas during the cooking time.
  • Add salt at the end, so you can add the exactly amount that you like.

Leftovers Management

  • Enjoy the dish the next day as flavors intensify. Alternatively, freeze any leftovers for future enjoyment.
  • Use the broth for a warmth soup with some noodles!
