- Add the milk and oil slowly while beating.
- In a separate bowl, sift the flour with salt, cinnamon, and baking powder. Add the lemon zest and mix.
- Gradually incorporate the flour mixture into the egg and sugar mixture. When well mixed, beat at high speed for 3 minutes.
- Fill a pastry bag with the batter and fill the muffin liners three-quarters full (about 60 grams / 2 ounces).
- Cover them with a cloth or plastic wrap and let it rest in the refrigerator for a minimum of 4 hours, or overnight.
Preparing for Baking
- Preheat the oven to 410°F (210°C) and line a muffin tin with paper liners.
- Take the batter out of the fridge and sprinkle half a teaspoon of granulated sugar on top of each magdalena for decoration.
- Bake the magdalenas at 375°F (190°C) for 18-20 minutes, depending on the size of the liners and your oven. Check for doneness by inserting a toothpick; it should come out clean.

Tips
Measures
- Ensure you maintain the basic ingredient proportions for good texture and flavor.
Ingredient Approach
- Sifting the flour and baking powder before adding them to the mixture improves the texture of the magdalenas.
- You can also enhance their flavor and presentation by drizzling them with melted chocolate or filling them with chocolate cream or pastry cream. While there are many variations to explore, the classic ones that evoke memories of the village are often topped with granulated sugar for that rustic charm.
- Please try to use mild olive oil whenever possible. If the flavor is too strong, you can opt for sunflower oil. You can also experiment with orange zest instead of lemon for a different flavor.
Leftovers Management
- Magdalenas stay fresh in an airtight container for several days. You can also freeze them and thaw them whenever you want to enjoy them.
