If you like rich banana taste with a hint of fig flavor, this recipe is for you. Loaded with healthy and satiating ingredients, these muffins will keep you full and satisfied for many hours. They are great served for breakfast or as a snack, and they are fairly easy to make.

1 cup whole grain flour
1 cup unbleached all-purpose flour
1/2 cup quick oats
1 tbsp wheat germ, plus some to sprinkle on top of muffins (optional)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup coconut oil
1 cup fig jam
1 large egg
1 tsp vanilla extract
1 1/2 cups mashed ripe bananas (3 bananas)
1/2 to 3/4 cup chocolate chips (optional)
Preheat the oven to 350 F.
In a medium bowl, whisk the flours, baking soda, baking powder, and salt. Set aside
In a large bowl, blend the coconut oil and fig jam. Add the egg. Then add the vanilla and bananas. Stir in the flour mixture and blend until all ingredients are incorporated. Fold in the oats and chocolate chips.
Line with paper cups or lightly oil a muffin pan.
Pour the batter into muffin pan and bake for 20-25 minutes or until a tooth pick inserted in the center of a muffin comes out clean.
Take out of the oven and let cool for 5 minutes on a wire rack before removing the muffins from the pan. Place the muffins back on the wire rack to cool completely.
Serve as is or with tea or coffee.
