Whether it is Cinco de Mayo, Super Bowl, or no holiday in particular, nachos are a great excuse to have a party. Topped with wild smoked salmon and served with delicious sides, these are not your usual nachos, they are ‘Alaska style’ that will make you ask for more.
Feel free to adjust amounts of the ingredients to your liking.
corn or multi grain tortilla chips (enough to make a layer on 15 by 10 inch baking sheet)
2-3 cups pepper jack cheese, grated
1/2 cup tomatoes, seeds removed and chopped
1/4 cup jarred jalapenos, chopped
1/4 cup smoked salmon, shredded or chopped
2 tbsp cilantro, chopped
Preheat the oven to 400 F.
On parchment-lined baking sheet, place the tortilla chips. Evenly spread the cheese over the chips. Sprinkle the tomatoes and jalapenos over the cheese.
Bake in the oven for 10 to 12 minutes until cheese melts.
Remove from the oven and sprinkle with the smoked salmon and cilantro.
Serve with guacamole, salsa, and sour cream.
