I was indecisive about Valentine’s Day dessert this year, so instead of baking, I decided to make parfaits. And I don’t regret it, because these layered treats turned out tasty and beautiful!
This is a simple and quick dairy free version of the parfaits, but you can substitute dairy or soy yogurt for coconut milk if you are not a fan of coconut. Also, you can adjust amounts of the ingredients to your liking. Try it out. You won’t regret it. Happy Valentine’s Day, or if you are not celebrating happy weekend 🙂

coconut whipped cream
4 tbsp granola (Here is a link to a delicious granola recipe from Sam’s Kitchen.)
3-4 tbsp nuts, chopped
2 tbsp dark chocolate, chopped
1/2 cup strawberries, chopped
raspberries for garnish
Coconut Whipped Cream:
1 can coconut milk, unsweetened, chilled in the fridge overnight
2 tbsp berry syrup
1/2 tsp vanilla extract
chilled mixing bowl and whisk
To make the coconut whipped cream, remove the solid part of the coconut milk from the can and place it the chilled bowl. Add in the berry syrup and vanilla. Whisk in a blender or with the hand held mixer until the ingredients are incorporated. If the mixture is too thick, add some of the coconut liquid from the can, little at a time. Whisk for 15 seconds.
Layer the ingredients in each of 2 glasses in the following order: 1/6 of the coconut whipped cream, 1/4 of the granola, and 1/4 of the nuts.
Add another layer of the coconut whipped cream.
Then, add 1/2 of the strawberries.
Add the final layer of the coconut whipped cream, 1/4 of the granola, 1/4 of the nuts, raspberries, and 1/2 of the chocolate.
