Weather you don’t have time or just don’t feel like making a pie from scratch, you can still have comforting taste of apple and cranberry pie by making a crisp instead. It takes only 15 minutes to put together but is as delicious as pie. It tasted so good that I made it twice in one week; and with the abundance of apples and cranberries, this easy recipe is a must on my dessert menu.

5 large apples, peeled, cored, and chopped
2 cups cranberries or blueberries
1 tsp vanilla extract
2 tbsp whole wheat flour
2 tbsp brown sugar
1/2 to 1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves (optional)
6 tbs butter, cut into small pieces
1/2 cup whole wheat flour
1/2 cup walnuts, chopped
1/3 cup instant oats
1/3 cup brown sugar
In a large bowl, combine the apples, cranberries, vanilla, sugar, spices, and flour. Grease 9 by 13 inch baking dish. Evenly spread the filling in the dish, and set it aside.
In a bowl, mix the flour, nuts, oats, and sugar. With your fingers blend in the butter until the mixture resembles course crumbs, or pulse the mixture in a blender. Sprinkle it over the filling.
Bake in the 375 F preheated oven for 40-45 minutes or until the crisp starts bubbling at the edges. Let cool on a wire rack for 15 minutes before cutting into.
Serve with ice cream, custard, or whip cream.
