After a long day of picking wild blueberries in the Chugach Mountains yesterday, at a different location this time, I came home with a bucketful I can make all kinds of goodies with.
Since the weather has been unusually warm lately, instead of baking with the berries today, I decided to make cold and creamy smoothie.
Prep: 2 min Servings: 2-3
1 cup blueberries
6 figs, frozen
1 cup coconut milk, unsweetened, chilled
2 tbsp flax-seed, ground ( if you have a powerful blender like Vitamix, you don’t need to grind the seeds)
1 tbsp raw honey (if you like your smoothie moderately sweet omit the honey)
Place all the ingredients in a blender. Blend well. If the smoothie is too thick, add some water, a little at a time, and blend until it reaches the desired consistency.
Serve as is or topped with whip cream.
